Butter Chicken

A new found FAVORITE! Super fun to prepare because it seems so ethnic and different!  When I cook I love to cook for a crowd so you may find my recipes too big but know you can adjust it real easy or left overs are always handy to have!

Ingredients List:

  • Boneless Skinless Chicken Thighs (I get the large fresh package from Costco)
  • Peanut Oil or Coconut Oil
  • 1/4 Cup Butter
  • 1 Lg. Onion Chopped (Yellow or White)
  • 1 Tbs. Fresh Garlic Minced
  • 2 Tbs. Fresh Ginger Grated (or Powder (1Tbs))
  • 1 Lg. Lemon (1/4 Cup)
  • 1 Cup Greek Yogurt (or Plain Yogurt)
  • 1 Cup Half & Half Cream
  • 2 Med. Cans Original Tomato Sauce
  • 1 Sm. Can Tomato Paste
  • 1Tbs. Garam Masala (Indian Spice)
  • 1 Tbs. Chili Powder
  • 1 Tbs. Ground Cumin
  • 1 Tbs. Cayenne Pepper
  • 1 Lg. Bay Leaf
  • Salt & Pepper to taste

How To:


BBQ your Chicken Breasts and set aside while you prep the sauce.  In a lg. fry pan add the oil and butter and saute the onion till it becomes almost translucent.  Add your Garlic and Ginger and spices.  Cook for 1 min and begin to add your Lemon, Tomato Paste, Sauce, Yogurt and Cream.  While letting the sauce simmer, chop the chicken into bite size pieces and add to sauce! Serve hot over rice and a handful of spinach and sliced Naan bread! 


Tips for Sides:

  • Basmati Rice- (3 cups Rice, 4 cups water, 2 cups chicken broth with 1 Tbs. butter.  Bring to a Boil and then cover and let simmer for 20 min.)
  • Naan Bread - (Drizzle with Olive oil, butter and some lemon juice and then place on the BBQ just to heat it though and add a bit of nice crunch)
